One of the nice things about being a chef is that occasionally some board of tourism will send you on a trip (remember trips?) and you get to do a deep dive on a cuisine you never got to explore enough before. Last year, I was lucky enough to go to Japan and while I incorporated some of things I learned into previous menus, this is the first time I’ve gotten to go totally Japanese.

This entire menu is only $55 (includes tip but not tax)
There's also a drink pairing to go along with the meal. For only $30 we'll deliver a flight of sake (drink them all at once or savor them slowly) plus a hot toddy made from Japanese whisky.
